I am helping my niece with a science project for her first grade class but I want to have all the facts.

The specific mass of paint thinner (or mineral spirits) is .7g/cc which means it's specific mass/density is less than water (1.00g/cc). Very similar to oil and vinegar. They just won't mix.

Check out the different chemicals that the thinner has. I think that it has something to do with one of the chemicals that separates water. It's good for water proofing some things too I think.

water and oil don't mix, as we know.
