Why do we eat more chicken than beef now?

North Americans ate more beef than chicken only a decade ago.. now chicken is more popular.

Is it health related?

Partly health related and partly marketing. Also I seem to remember when I was a kid you basically could get whole chickens, and not much else. Now you can just get the parts you like best, just like with steak.
