If your struts go out will it make you wreck when they go out? Will you still be able to drive the car?

You can still drive it, but it will handle very badly going around bumpy curves and possibly lose the road.

Struts are simply a shock absorber. If one were to fail suddenly, it may cause unusual handling characteristics, as in leaning or bouncing oddly over bumps. Dangerous in the wrong circumstances possibly, as in wet weather, highway speeds, new driver, etc....
