I know a racing pigeon flies 60 MPH, I guess a swallow will probably double that speed

without the references to monty python... i would imagine the airspeed of a swallow coudl be fairly high if shot out of an air cannon. i would not presume about an explosive cannon it may cause the swallow to disentegrate.
if shot out of an air cannon with a huge barrel to increase velocity i would imagine that most birds could acheive an airspeed of atleast 800pmh
