If they rip out the part that you like about the bread just tell them that you forgot and that you want a new roll. It's not a pain it's just asking for what you want. I they won't give you a new roll then you should go to a new sub place.

I think subway used to do that but not anymore. Togo's and other sub sandwich places here in California do not do that either.
Maybe just try a different sandwich shop so you won't be a pain.

Well I used to work for a sub restaurant and the reason that they did it was to make a place for the toppings to lay with out getting all over you or anyone eating one

I don't know where you are getting your subs but the Subway near my home doesn't do that. They might with the meatball subs to keep them from falling out.

I've never seen a sandwich place do that and my favorite places to eat are Subway and Quizno's. Maybe its a regional thing, but here in CA I've never seen that... sorry.

They try to stuff the filling in there so it doesn't slide around when you eat it.
