The Premiership finishes between the middle and the end of May and starts between the middle and the end of August every year. They have friendlies ( or exhibitions as you say in the US ) throughout August for the build up to the start of the Premiership.
This is because every 2 years there is an international competition [ either the European cup ( national ) or the World Cup ] throughout the summer months and the majority of the Premiership ( due to it being the biggest football league ) has a lot of domestic and foreign players that play for their national sides.
