When they use the word "honest" in their sentences. Also when they talk about how they would never lie to you. Then, I know they're lying.

When he/she sweats profusely... When his/her nostrils flare for no reason... When he/she touches his/her nose*...
*I read this from a book about body language, that as children when we tell lies, we cover our mouths. As we get older, we "perfect" our body language and sometimes we "forget" so when we lie, we would reach to touch our mouths but the body signals the hand to move away from the mouth and to the nose. Don't ask me if I understand this (because I don't), I just find it amusing so I thought I share it with you.
