Sometimes when I peel my boiled eggs the egg tears away with the shell. Can I add something to the water as they boil so they peel with less damage to the egg itself?

Hi there. After you have cooked your eggs, drop them into ice cold water or run them under the cold tap for a minute or so. This will stop the cooking process and loosen the membrane surrounding the egg beneath the shell. It is the 'sticking' of that membrane that causes fragments of egg to come away and create the pitted appearance you're seeing now.

Yep! I learned this from my old job.

Add about 2 tablespoons salt to the water and give it time to heat enough to dissolve a bit. Then add the eggs, bring 'em to a boil, then simmer..for a bit. Cool. Peel. It really does the trick, if it's not enough, just add a little more
Oh! And it's easier to break the shell underwater. Have a large bowl, or your sink, full of water, and tap the egg on the bottom. It gives nice small cracks in the shell.
