The question says it all, how much better will the picture look for my PS2 if I use S-Video input rather than the standard RCA input? Is it even a noticeable difference?

The main improvement will be the elimination of color bleeding at points where different colored areas join, and the elimination of "dot crawl" interference in highly-colored areas. For game pictures, which are generally brightly colored with high contrast, the improvement with s-video is even more significant than ordinary television. s-video means that the brightness (luminance) parts of the picture and the color (chrominance) part of the picture are transmitted separately ("s") to avoid interference.

S video is always the best connection.
