A red-eye flight is a flight operated by an airline late at night or very early in the morning, during the period from 9:00 p.m. to 5:00 a.m. local time. The term "red-eye" derives from the fatigue symptom of having red eyes. Red-eye flights are often called a "dry flight". This simply means that there is no moisture in the air at high altitudes during the late evening and early morning times.

Because if you cant sleep on the plane, you arrive at your destination in the morning with red eyes from lack of sleep. So when you are in the airport in the morning and you see a bunch of people coming off an overnight flight, take a look at them; they mostly have sleepy, red eyes...

Because most people a) don't sleep well on planes anyway and b) you are often 'losing time' because you are crossing time zones, so a 5.5 hour flight from San Francisco to New York replaces the normal 8.5 hours you would have slept in bed.
People arrive with 'red-eyes' from lack of sleep.

It's very hard to sleep at night on a plane that's flying millions of feet into the air.. lol. So you know how when you don't sleep your eyes are red and blood cracked? That's why it's a red eye. Few people get sleep so at landing you are tired and your eyes are well, red. Lol.

Because no-one in their right mind can actually sleep in Coach seating on a long flight. Thus the dry, irritated, red-eyes. Additionally, it can mean that your flight either leaves or arrives in the very early AM.

Because for many people it is hard for them to sleep in a passenger jet. I have this problem myself. So if they get on at night they do not get any real sleep and they arrive at their destination with red eyes. I have gone 10 hours like this and then there is the big time change.

Because you don't get much sleep 'cuz it's too uncomfortable squished in that little space of a seat... and with the plane's engines making racket noises, not to mention other noisy passengers; oh, and it's a little hard for me to get to sleep on the plane also because it is constantly moving up and down with the vibrations, especially when experiencing turbulence... I feel like I was about to fall when I sleep on a plane.
