Strawberry bar
Ingredients:
1 c. flour
1 c. rolled oats
1/2 c. butter or margarine, softened
1/3 c. light brown sugar
1/4 tsp. baking powder
1/8 tsp. salt
3/4 c. strawberry jam
Directions:
Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
In a large bowl, mix everything together except the strawberry jam.
Measure out 2 cups of this mixture. Leave the rest in the bowl, and set it aside.
Take the 2 cups of the mixture and press it into the bottom of the pan. You can use your hands or a spoon. Make sure you cover the entire bottom of the pan!
Using a large spoon, spread the strawberry jam on top of the mixture in the pan. Spread it evenly all over.
Take the mixture that was left in the bowl, and spread it over the strawberry jam. Press it down lightly.
Bake for 25 minutes. Remove the pan from the oven, and allow it to cool for at least 15 minutes.
Cut the bars into 12 squares to eat and share!

If you aren't counting calories, mix marshmallow cream and cool whip OR marshmallow cream and cream cheese with a mixer and use it as a fruit dip...YUM!
Works pretty good with other fruits too.
Actually, another idea I'd forgotten about:
Strawberry Delight
Get some angel food cake and a shallow pyrex pan (something with a lid). Pull apart the angel food cake and put in bottom of pan. Cover with vanilla pudding, then sliced up strawberries. Cover with strawberry glaze, then cool whip. Works really nice for July 4th cookouts.
It's pretty fast and easy and totally yummy.

in a blender mix about 2 cups strawberries ( frozen or fresh), 1 cup yogurt ( more or less for thickness), 1 teaspoon vanilla, milk ( to thin ), few ice cubes. blend till smooth. Also can add a french vanilla carnation instant breakfast for more of a creamier taste. Both ways are filling and refreshing.

I have never been able to use strawberries in any receipe, because they are all gone before they can be used. Someone keeps eating them, and I live alone.
