I'm trying to be better about eating vegetables, but except for the occasional salad, I really only like cooked vegetables, like in soup. Am I still gettting the benefits of eating them if they've been cooked for hours in a pot of water and spices?

not enough to really worry about it. personally when cooking I add in the most nutritious vegetables when the majority of the cooking time has elapsed for that reason

Steaming vegetables is the best way to retain the most vitamins. Overcooking them until they are mushy, makes vegetables lose some of their nutritional value.
