3 oz is a good portion, too. That would be 15 lbs of ground beef. Your choice -- if there are other fillers in the sandwiches, then you might be able to get away with 3 oz beef portions.

Don't forget to discount any fat that would be drained off, too. If the ground beef is 85% lean then 15% is fat and a lot of that will be cooked off, so add 15 - 20% to your total weight (mine goes up from 15 lbs to 18 lbs).

This is a lot of meatballs, I would buy them (Rosina Brand), they come in the following sizes and are baked already, all 10 lb boxes.
.25 oz-used in wedding soup---640 ct
.5 oz------320 ct
1 oz-------160 ct
1.5 oz-----107 ct
2 oz--------80 ct

4 oz. is a traditional serving, but maybe figure 5 oz. per person since some meatballs might not hold their shape and fall apart. (It's like boiling eggs, I always do one extra in case it cracks and doesn't boil right.) And if you have leftovers, well, then you have a few leftovers!
