Ex. I am writing a poem for my poetry class.
You would never have a "poem class".

Poetry is a genre of literature, with its rules.
A poem is a single piece of literature written according to the riles of poetry. These rules are the subjects to study.
Sometimes, as a metaphor, people could use a word "poem" or "poetry" in other areas, like:
"Oh my God, that cake was a poem!"

A poem is a distinct piece of work. Poetry is all poetic expression. We can even talk about something being poetry when it's actually just a part of a larger text.
