"Coed" comes from "co-education"--this goes back to the times when there were boys-only and girls-only schools as the norm, particularly at the university level. Along in the 50's and 60's a lot of one-gender schools went "co-educational" meaning boys and girls together. Then there were still one-gender dormitories until the 80s or so, when even dorms went "co-ed"--though usually separated into corridors or floors, all men and all women in different areas.
In old movies and books you will still hear of college girls referred to as "a pretty young co-ed".

Referring to persons, it's a female student; to an educational institution, it's one that has both males and females in its student body (coed high school, et al.); to a living area, it's where men and women share the same floor but not the same room (coed dorm); to other areas, like a coed pool, library or lounge, the area is open to both sexes. A male may attend a coed school, but he is never referred to as a coed.

The opposite of coed is "single-sex", as in "single-sex school", one which accepts only boys or only girls. A school can be coed (have both male and female students) but not have coed dorms.
