Butterscotch Cake-Mix Cookies
36 cookies 25 min 10 min prep
1 (18 1/4 ounce) yellow cake mix with pudding
2 eggs
1/2 cup butter, melted
1/4 cup brown sugar
1 tablespoon cocoa powder
1 cup butterscotch chips
1/2 cup chopped walnuts, if desired
Preheat the oven to 350 degrees.
Mix ingredients, folding in chips and nuts (if using) last.
Drop by tablespoonfuls onto parchment paper. Bake 14 minutes or until golden on the edges, being careful not to overbake. Cool for a minute then transfer to wire racks to cool.

The absolute beauty of this recipe is that the ingredients are usually RIGHT on your shelves just asking to be baked into this delicious cookie! Another selling point is that simply by changing the basic flavor of the cake mix (say from plain white mix to that of "german chocolate") and by adding a few extras (I'll give you some examples later) you have entirely DIFFERENT cookies!!! We have found these to be good for pot lucks, family dinners, school parties and the every looming "Bake Sale"! No matter what you use these for I'm sure they will be as much of a hit in your house as they are in mine!!!
Cake Mix Cookies
INGREDIENTS
1 package any kind of cake mix (generic or store brand works great!)
3/4 cup vegetable oil (or canola oil)
2 eggs
1/2 cup milk
2 to 2 3/4 cup oatmeal
1/4 brown sugar
Cream together the eggs, milk, oil and sugar
Add the cake mix and oatmeal...being sure to mix well (you may need more or less oatmel depending upon your cake mix)
Drop on greased cookie sheet....bake at 350 degrees for 10-14 minutes
EXTRAS: add chocolate chips or chunks to ANY mix
add white chocolate chunks and walnuts to german chocolate mix
add chocolate chunks, miniature marshmellows and mini m&ms to
german chocolate mix
add white chocolate or strawberry chips to strawberry cake mix
add pecans and caramel bits to yellow cake mix
ETC....ETC....ETC.....
The ingredients and options available with these cookies are only limited to what your family likes best. Get creative and invent your own family's special cookie!!! Who knows, it may be an instant hit at the next bake sale and you might have a "regular request" coming your way for them!!!

Peanut Butter Candy Cookies
These super simple cookies start with a cake mix. Use candy coat4ed peanut butter pieces instead of chocolate if you'd like.
1 pkg. two layer yellow cake mix
1/2 cup peanut butter
1/4 cup butter, softened
1/4 cup milk
2 eggs
1 cup candy coated chocolate pieces
PREPARATION:
Preheat oven to 350 degrees F. Combine all ingredients except candy in large bowl and mix until blended. Add candy, then drop by rounded teaspoons 2" apart onto ungreased cookie sheet. Bake at 350 degrees F. for 8-11 minutes until cookies are light golden brown. Remove from cookie sheets to wire racks immediately. 42 cookies

Lemon Cake Mix Cookies
Box lemon cake mix
1 (8oz) cool whip
2 eggs
Combine ingredients. Drop spoonfuls onto greased cookie sheet.
Cook in 350 degree oven for 10-12 min. Til starting to set, cookies may puff up and then settle while cooling to look like a
crinkle cookie.
