Or is that just potato bread, because of crispy crust...homemade bread doesn't stay fresh as long as store bought? Is that right? All I have tried with yeast so far is potato bread.

I saw one recipe for pizza dough where they put a crushed vitamin C in the liquid...but I don't think this will preserve it? Not sure what the vitamin C was for...

You do not have to eat homemade bread right away, but it will go stale quite quickly. Even bakeries classify their breads as "day-old" bread if it is not sold that day.

However, you can make several loaves at a time and freeze the ones that you do not expect to eat right away. My grandmother used to make a big batch of bread and then freeze 4-6 loaves for use later.

Of course, if we kids were there and smelled the fresh bread in the house, usually there was not a lot left to freeze ;-)

By the way, if you do end up with stale bread, you are supposed to be able to freshen up the loaf by putting a damp paper towel over them and sticking them in an warm oven for a 5-10 minutes.

And the practice of making bread pudding using stale bread seems to be a dying art form. Just take any old bread, cake, donuts, etc that have no mold on them and break them into bits in a Corningware deep sided baking dish, mix in two eggs, tsp vanilla, 1/2 cup brown sugar, and enough milk or cream to keep the bread moist, then cook in 375F oven until the center looks like custard (longer if you like yours more "cakelike". You can also add raisins, apricots, bits of apple, or your favorite nuts.

We bake our own organic bread and don't have a problem with it getting stale. Keep your bread at room temp in a paper bag. After you slice it, keep the cut end down on a flat surface to retain moisture. If you want to store, freeze in a plastic bag. Do your best to remove all the air. It will be good up to 2 months. Thaw in the unopened plastic bag at room temp. This will allow the bread to absorb the ice crystals and rehydrate itself. To recrisp, place the bread in the oven at 350 for 10 minutes. Enjoy!

Well, it does go stale fairly quickly because there are no artificial preservatives in it. But stale homemade bread is better than fresh store bought bread... And it makes great toast, French toast, bread pudding, etc.

home made bread is best when just out of the oven after a hour or two the tast gets to dry and store bought begines to tast better. I don't know why either.

It won't last as long as the stuff at the store, but you can usually get a week out of it. Mine never lasts that long because it gets eaten up before that!

If you double bag it, you can freeze it and it will be fine for later. Have to double bag it though, single bag and it gets nasty.
