I bought wheat bread about a week to 2 weeks ago, and it doesnt have an expiration date on it. I also keep it in the fridge. What are the signs of it being bad?

The smell will change before you will ever see mold. Also at room temp the bread will be firm.

I keep my bread in the fridge as well. It will get a white looking powder ( looks like flour) on the crust......once you start to see that, it's got a day or less.

well, u can freeze bread and it comes out just as fresh. hardening, mold.. excessive moistness if u keep it in the fridge. it u keep the heel as the first piece it will keep the rest of slices fresher and prevent them from hardening.
