Spaetzle
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon ground nutmeg
2 large eggs
1/4 cup milk
3 tablespoons unsalted butter
2 tablespoons minced fresh chives
In a large bowl, combine the flour, salt, pepper, and nutmeg. In another mixing bowl, whisk the eggs and milk together. Make a well in the center of the dry ingredients and pour in the egg-milk mixture. Gradually draw in the flour from the sides and combine well; the dough should be smooth and thick. Let the dough rest for 10 to 15 minutes.
Bring 3 quarts of salted water to a boil in a large pot, then reduce to a simmer. To form the spaetzle, hold a large holed colander or slotted spoon over the simmering water and push the dough through the holes with a spatula or spoon. Do this in batches so you don't overcrowd the pot. Cook for 3 to 4 minutes or until the spaetzle floats to the surface, stirring gently to prevent sticking. Dump the spaetzle into a colander and give it a quick rinse with cool water.
Melt the butter in a large skillet over medium heat and add the spaetzle; tossing to coat. Cook the spaetzle for 1 to 2 minutes to give the noodles some color, and then sprinkle with the chopped chives and season with salt and pepper before serving.

1 pinch freshly ground white pepper
1/2 teaspoon salt
2 tablespoons butter
DIRECTIONS
Mix together flour, salt, white pepper, and nutmeg. Beat eggs well, and add alternately with the milk to the dry ingredients. Mix until smooth.
Press dough through spaetzle maker, or a large holed sieve or metal grater.
Drop a few at a time into almost boiling water and let cook until they rise to the top. Scoop them out with a slotted spoon. Drain well.
Saute cooked spaetzle in butter or margarine. Sprinkle with crushed buttered bread crumbs, and cheese or just saute in butter until golden brown.
This will only make enough for 2-3 people.
Also, I always drop my spaetzle in ice water after removig from the boil water. It keeps them firm and stops the cooking.

all of these spaetzle receipes are true to an extent. when my family made it we baked it into little balls. then when it cooled we threw it in a big metal tin and rolled it in honey and sprinkles. It was mixture similar to these other recipes containing flour, butter, sugar, cinnamin, nutmeg, egg, vanilla and baking powder. it depends on if u liek it sweet or not but your welcome to try it!

That is one of my favorite side dishes. I make it by mixing one egg with a cup of flour and add milk, and salt to the mixture until it is thin enough to flip into a pot of water. With some practice, you can flip it out of your mixing bowl and into your boiling salted water. Cook until tender. You can also use the colander method, but I found that it comes out too fast and globs together. You are making me hungry.
