I freeze soup and stew all of the time. I buy those small Glad containers (or something similar) in a single portion size, so I only have to defrost what I'm going to eat. I just made pea soup and did the same thing. It freezes and re-heats very well.

In a 2-quart saucepan, melt butter and saute carrot and scallions. 2. Add flour and cook, stirring, until foamy. 3. Add the evaporated milk and the broth and bring to a boil, stirring occasionally. 4. Add peas, reduce heat, and simmer until carrots are tender, about 6-8 minutes. 5. Whirl the soup in a blender, a portion at a time, until smooth. 6. Return puree to the pan, stir in the sherry to taste, and heat through. 7. Serve hot or cold, float a lemon slice on each bowl of soup and sprinkle some parsley over.

Yes, I made a big pot of it last week and put what was left in the freezer, and since it is raining cats and dogs here (Durban, South Africa) at the moment, we are going to be having it for supper. I always make large quantities of soup for the freezer, and have never had any problem with them. I usually pack them in a zip lock bag, squeeze most of the air out, and store them flat in the freezer, so as not to take up too much space. Depending on the type of soup, I either give it a quick blast in the microwave to defrost it, or simply leave to defrost on it's own. ( If you have chopped veggies like potatoes or carrots in it, defrost it in the microwave, or the veggies will be spongy).

I freeze soup all the time. You might want to do it in small batches though, because you don't want to freeze it the second time.
