Before preparing any thing with hot peppers make sure you wear rubber gloves. The oils from the peppers can pack a punch if it gets in your eyes or when going to the restroom. This will save you from pain and discomfort.

Place every thing in a blender and use the pulse setting until desired consistency.

4 tomatoes
1 sm to med onion
2 hot peppers (jalapenos or habaneros)
1/4 cup vinegar
and cilantro to taste I use about a handful

Place in a bowl with a lid and let set for several hours to over night in the refrigerator to allow the full flavor of the salsa to come out. and enjoy

This is from a restaurant in Albuquerque (we know the owner)

2 15oz. cans of diced tomatos

1 small handful of cilantro (you can find it in the 'greens' section of the grocery store produce section) Remove most of the stems.

1/2 medium onion, chopped coarsly

salt and pepper (quite a bit of pepper)

1 or 2 Jalpeno peppers depending on how hot you want it -- remove the stem. Remove the seeds and seed veins if you want milder salsa. Chop coarsly.

Put the tomato, onion, cilantro in a blender. Blend until it has a smooth consistency. Add salt and pepper to taste. Start adding the Jalapeno pepper pieces to the blender. Blend and taste until it is as hot as you like.

3 red-ripe tomatoes, cored and chopped
1 Large white onion, chopped
3 garlic cloves, chopped
4 jalapeño or serrano chiles, stemmed and chopped (not seeded)
¼ Cup chopped cilantro or flat-leaf parsley
1 lime, juiced
1 Teaspoon kosher salt
6 grinds black pepper
1 Teaspoon sugar if the tomatoes are acidic (optional)


Combine the tomatoes, onion, garlic, chiles, cilantro, lime juice, salt, and pepper in a bowl. Mix well. Taste and add the optional sugar if necessary. Let the mixture rest for 30 minutes for the flavors to blend. Taste for seasoning and serve at room temperature.

Italian Salsa

1 (14 1/2 ounce) can Italian-style crushed tomatoes
1/2 cup green peppers, chopped
1/2 cup zucchini, grated
1/4 cup onions, chopped fine
1 garlic clove, minced fine
2 tablespoons black olives, chopped
1 cup mozzarella cheese, shredded
1/2 teaspoon salt


1. Comebine all ingredients in a non-reactive bowl.
2. Chill at least 30 minutes and serve.

the easiest and fastest: buy jalapeños and red tomatos (tey have to be very firm, not soft ot tender). Use a shredder to shred 2 jalapeños first and then 3 tomatos. This one is featured at "El Pollo Loco" restaurants. Caution is hot, use less jalapeños if desired.

I take Roma tomatoes, fresh jalapeno, and onion and put all into a food processor with garlic powder (it works better) some salt and if you like, cumin. Just mix it up and if you need more juice, add another tomato.
