I am trying to make some chili for a local shelter, and I have a problem. I have never made it before. Please, if you can help me, then please do.

Or follow this highly rated but easy recipe from foodtv.com. It's very close to the way I make chili from scratch.

1 pound mixed ground beef and sausage, browned and drained
1 medium onion, diced
1 green bell pepper diced
2 cups chopped celery
2 (28-ounce) cans diced tomatoes
1 (28-ounce) can whole, peeled tomatoes
Ground cumin
Chili powder
1 (14 1/2-ounce) can pinto beans, drained and rinsed
1 (14 1/2-ounce) can black beans, drained and rinsed
1 (14 1/2-ounce) can kidney beans, drained and rinsed
1 package chili seasoning mix
Shredded cheddar, sour cream, chopped green onions, for garnish

In a skillet brown ground beef and sausage, drain and set aside.

Spray large pot with nonstick cooking spray and heat over medium heat. Add the onion, green pepper, and celery and saute briefly. Stir in the diced and whole tomatoes. Add cumin and chili powder, to taste, and cook for about 8 minutes or until vegetables are tender. Add the beans, browned meat, and chili seasoning. Partially cover, and let simmer for 4 hours.

Serve with Cheddar cheese, sour cream, and green onions.

Making Chili is really easy its starts like making spagetti sauce you saute the ground meat till mostly cook trey then add your peppers and onions til they are tender. Add canned tomatoes, Kidney beans, and stock/broth. Fianlly after boiling add in Chili powder and cumin. I reall like to purree some of the beans for more body.

This makes a good sized batch that can be multiplied
Saute
3 pounds gound beef
4 bell peppers diced
3 large onions diced
2 tablespoons garlic powder or chopped garlic
simmer
#10 can diced tomaotoes
#10 can kidney beans
1 cup chili powder
1/4 cup cumin powder
2 tablespoons oregano
1 small can tomato paste
(optional) 1 bottle prepared salsa or 1/4 cup cilantro
2-10 cups of stock (depending on consstency wanted)

Note I dont call for salt since i usually use stock base that has salt

Make sure you have hot sauce for those that want it

these # 10 cans are restraunt sized since i assume that you are making a lot. They can be bought at warehouse stores as wells as loarger grocery stores and if that doesnt help try talking to a restraune they will usually be glad to sell to you if you tell them what its for. Also if you can buy the spices in a restraunt pack size its much cheaper. canned tomato sauce can also be added to stretch just add a little cup chili powder.

Here is one that my Dad found. Be VERY careful it can get out of control with the Jalapenos! But boy is it good!

El Cid Chili

• 2 tablespoons olive oil
• 2 pounds sirloin steak, cut into 1-inch cubes
• 1/2 pound ground beef
• 12 ounces chorizo sausage, casing removed, cut into 1/2 cubes
• 1 large yellow onion, coarsely chopped
• 1/4 cup chili powder
• 1 tablespoon garlic salt
• 2 teaspoons cumin
• 1 teaspoon dried basil
• 2 (14.5-ounce) cans beef broth
• 2 (14.5-ounce) cans whole tomatoes, drained
• 1 cup cilantro, chopped
• 1 cinnamon stick
• 3 bay leaves
• 2 green jalapenos, slit lengthwise 3 times each
• 1 tablespoon yellow cornmeal
• Salt and pepper, to taste
• Garnish with Cheddar and sour cream
Method:
Place oil in a large, heavy pot over medium heat. Brown the sirloin in batches. Remove to a bowl with a slotted spoon. Add ground beef, chorizo and onions to the pot and brown. Make sure to break up the meat. Return sirloin to the pot. Stir in remaining ingredients, except for garnishes. Cut three slits in each pepper from top to bottom but not all the way through to the bottom. Bring to a boil, reduce heat, and simmer for 2 hours. Stir occasionally, breaking up tomatoes. Before serving, discard cinnamon stick, bay leaves and jalapenos. Garnish, if desired.

I just made some last night and boy! was it delicious.

1 lb ground beef
1 lb hot italian sausage
1 pack hot chilli seasoning and 1 mild
1 can dark red kidney beans
1 green pepper
1 red pepper
1 tbs. chopped garlic
1 lg onion diced
1sm can tomatoe paste
1 lg. can whole peeled tomatoes crushed by hand

brown sausage and ground beef. drain. add all the rest of ingrediants including meat and simmer covered for 30-45 over medium heat. Uncover and stir occasionally for 1-2 more hours.

You can double or triple this recipe very easily and it really is a yummy pot of chili served with some cornbread on the side.

God bless you for helping! I have a really hearty recipe that is really affordable. Whats great about this is all the veggies. Just add what you feel it needs more of:
Witch's Brew
2lb ground beef
2 onions, chopped
3 cloves garlic, finely chopped
Sautee all of this in a large pot.
Add:
2 cans tomato soup
1 can milk
2 cans pork and beans
2-3 large cans veg-all (no juice)
4-6 cans light red kidney beans (no juice)
2 cans diced tomatoes (Put juice aside in case you have to thin it out)
1/2 cup ketchup
2 tablespoons mustard
Chili powder and cajun seasoning to taste (usually a couple teaspoonfulls of each to start)
Tabasco sauce if desired.

I sent in this recipe to yahoo answers last week.
Hope you can try it.
1 lb ground meat
2 carrots chopped
1 Spanish onion chopped
1 celery stalk chopped
the following three veggies are optional: mushrooms,broccoli,zucchini
3/4 tsp Garlic powder
1 1/2 tsp chili powder
1/2 Salt & 1/4 tsp pepper or to taste
1 large can diced tomatoes
1 small can tomatoe paste
2 cans red kidney beans
Fry onion in large frying pan in olive oil
add chopped carrot and celery and fry for 5 minutes add the rest of your veggies.
add gound meat and stir in with vegetables, cook 10 minutes
add canned tomatoes & can tomatoe paste to meat & veggies
Stir and add seasonings
Cover and cook for 15 minutes on low heat
Lastly add kidney beans with liquid. and season again if needed.
add tbsp honey to take away the tang of the tomato.
There you have it THE BEST CHILI!!!

I have a very easy recipe. This is how my mom made it and its how I make it too. I don't have exact measurements.

1 pack ground beef
saute and drain
Add 3 med size cans of tomato sauce
1 can of ranch style beans
salt
pepper
a little bit of garlic powder
paprika
and lots of chilli powder
Serve with crackers, cheese and sour cream if desired

My husband didn't think he liked chili till he tried mine, its so fast and easy and good!!!!!

Ohhhhh, I love chili!!!!

this is my own recipe:

1.5 lbs. browned lean ground beef
1 diced onion
1 diced green pepper
1 diced red pepper
1 tbsp garlic minced
1 tbsp. cayenne pepper
1 tbsp hot curry powder
1 16oz can diced tomatoes
1 6 oz. can tomato sauce

Place all in a crock pot and cook on low for 3 hours then
add:
1 can black beans
1 can dark red kidney beans
1 can small red kidney beans
(do not drain)
cook another 30 min and you are all set.
enjoy!!!
