"Campfire" Stew
1 tbsp. butter
1 lb. beef stew meat
1 tbsp. flour salt and pepper
1 large onion, chopped
2 stalks celery, sliced
4 large potatoes, peeled and cubed
1/2 bag baby carrots
1 container button mushrooms, sliced
1 small can tomato paste
1 gallon water

Heat heavy bottomed pot until very hot. Season flour with salt and pepper, dip stew meat into flour, covering well. Melt butter in pot, add meat and brown well on all sides. Removed meat from pan, add onion and celery. Cover and let sweat 2-3 minutes. Add tomato paste and about a cup of water, scrape brown bits from bottom of pan. Return meat to pan, add potatoes and carrots. Add enough water to cover vegetables plus an inch. Cover and let stew simmer until potatoes are done, adding water as needed to keep from scorching. Ten minutes before serving, add mushrooms and allow stew to come to a boil. Cover and allow mushrooms to cook. Serve.

Brown the meat in bacon-fat with NO flour.
Simmer in mix of beef-stock (no salt) and red wine with bay leaf or two.
Add some tomato paste in the last hour.
Remove beef, add a roux to thicken the sauce.

Add browned boiling onions and mushrooms, return the beef and simmer for another 20-30 minutes.

TOO rich !!

2 lbs stew beef dredged in flour and salt and pepper, browned in a fry pan, peel and chunk 5 potatoes, peel and slice 5 carrots, sliced up celery, 1 med onion chunked, place all but meat in bottom of crock pot top with the meat, do not mix meat with potatoes, Keep root veggies on bottom, so they cook evenly, top with stew beef and add 2 jars of brown or beef gravy pour over top and set on high for 10 hrs, when its done, mix 2 cups of COLD water(not hot not warm ) but ice cold water and 2 tablespoon of flour and mix in a covered container and shake it till all flour is mixed( if u use ice cold water with the flour, u won't have lumps in ur gravy, use the same method for homemade gravy) pour mixture over meat and stir in good and cover for about 5-10 min more and serve

I like to use chuck cubes - they're not pretty, but they taste amazing!
After I brown the meat in a little oil, I pour over some beef broth (bouillon is fine) to braise the meat and let it cook.

My friend uses a little red wine mixed with the broth.
