Use a knife, stand it up on end, and press the knife down the side to the cutting surface, rotating for each new slice.

First you cut off the top, then the bottom. The slice the skin off from top to bottom all the way round. The cut the black eyes out by cutting a v shaped groove around each eye. This, when done properly, give the pineapple an appearance of having slanting furrows running fro top to bottom. When slices, then the grooves give the slices a decorative appearance. Peeling this way, saves a lot of the pineapple flesh. If one had to peel so thickly that all the exes are peeled off at once, one would have to peel too thickly and end up with much less pineapple.

No! Don't cut the top off first, it makes a perfect handle. Cut off the base, stand it upright on your chopping board then with a narrow bladed sharp knife - a bread knife could substitute - cut vertical slices down to the base just thick enough to leave a few pits from the indents in the skin - about 5mm thick. You need to allow the knife to follow the curve of the fruit. The cleaner you want the chunks the thicker the slices - but leaving a few pits lets people know that you are using fresh not canned even before the very obvious taste difference hits them!

If you think you want rings, change your mind immediately. For chunks then cut off the top and leaves, OK nothing to hold onto now that's not slippery and juicy, then back on its end and cut vertically down the side of the central core which is too hard to eat. Repeat this 'till you are just left with core and chunks. Wash your hands. Clean the floor and walls. Eat the chunks. Delicious and ten times better than canned. Do all of this on a plate and you will not waste the juice.

Try the following way
Place the pineapple on its side and slice off the top and bottom portions

Stand the pineapple upright and begin to shave off the outer skin

Cut the pineapple in half and make diagonal cuts along the side to remove the little brown "eyes"

Make a diagonal slice to remove the core and continue to slice the pineapple into even slices down its length.Chop the sections into smaller pieces.

Step One: Lay pineapple horizontally on a cutting board, and cut off the leafy top (the plume) and the base.

Step Two: Stand the pineapple upright, and cut down the sides to remove the rind. Try to remove as little of the flesh as possible.

Step Three: While the pineapple is upright, cut it into thirds by carefully slicing downward as shown to remove the fibrous core.

I cut mine like this:
I cut the top off, and quarter it longways.
I cut out the tough center down the middle.
I cut off the bark and if necessary use a peeler to get all the nubs off.
I then cut again two or three eays longways and then slice lengthwide to get bite sized pieces.

First cut off the top and the bottom so you have a stable surface to work with. Then cut from top to bottom in small slices to take off the skin.
