Also, when you bind meat together do you use egg yolk, or the egg white? Thanks.

To bind, use egg yolk and even a small amount of bread crumbs. Mix your meat with items like cooked bacon, cheese, or dry ranch dressing. I have even done all three. The key to a good burger is do not rush the cooking process. Take your time. And don't forget the pepper.

Yuck! I hate eggs in my burgers, and don't you dare use bread crumbs. You'll totally destroy the taste of the beef.

Just season the meat with salt and pepper, or maybe garlic salt if you have it, pack the meat into tight balls and flatten with your hand. The edges will splay, but just smooth them out. (You can also buy those pre-paddied burgers at the strore, much easier.) Grill on a barbeque.

Serve on your choice of buns, with a choice of toppings and condiments, such as ketchup, mustard, pickles, tomatoes, onions, lettuce, or if you want to get fancy, salsa, sliced avocados, and cheese.

Saute chopped onions, add ground beefcontinue to cook for 5 more minutes, add chopped/grinded tomatoes, salt pepper, bay leaf. cover and let simmer in low for about 30 minutes. Then add a handful of rice, mix and simmer until the rice is almost cooked. Then put the micture in a open oven pan (the mixture s/b about 2 inch thick), beat 2-3 eggs, top the mixture with it, and bake until eggs are done. This is a very old recipe that my great grandmather used to do. It is a calorie and proteine bomb, but...... :). Good luck

1 lb. ground beef
1 pkg. (1-1/4 oz.) TACO BELL HOME ORIGINALS Taco Seasoning Mix
1/4 cup PHILADELPHIA Chive & Onion Cream Cheese Spread
1/3 cup KRAFT Shredded Cheddar Cheese
4 hamburger buns, split, lightly toasted
1/2 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Medium Salsa
8 slices ripe avocado



PREHEAT grill to medium heat. Mix meat and seasoning mix. Shape into 8 thin patties. Mix cream cheese spread and shredded cheese. Spoon about 2 Tbsp. of the cheese mixture onto center of each of 4 of the patties; top with second patty. Pinch edges of patties together to seal.
GRILL patties 7 to 9 min. on each side or until cooked through (160°F.)
COVER bottom halves of buns with burgers. Top with salsa, avocado and top halves of buns.

Classic Beef Burgers With Cheese Sauce:

30 min 30 min prep
4 servings

2 cups colby cheese or mild yellow cheddar cheese, shredded
2 teaspoons cornstarch
1 garlic clove, halved
1 cup lager beer
2 teaspoons Dijon mustard
salt & freshly ground black pepper
1 lb ground sirloin, at room temperature
1 lb ground chuck, at room temperature
4 hamburger buns
2 tablespoons unsalted butter, melted
vegetable oil, for brushing
4 boston lettuce leaves
4 slices tomatoes (thinly sliced)

1. Mix cheese and cornstarch together in a small bowl. Rub garlic all over the inside of a medium saucepan, add the clove and lager to the saucepan and bring to a gentle boil. Add handfuls of cheese to the saucepan, stirring in between handfuls, until melted, and bring to a boil. Add mustard, salt and pepper and simmer over moderate heat until sauce begins to thicken, about 2 minutes; keep warm over very low heat.
2. Lightly knead the sirloin and the chuck together in a bowl. Form 4 large equal patties about 3/4" thick. Season the burgers generously with salt and pepper and put on a saran wrap covered plate. Brush the insides of the buns with the melted butter.
3. Light your grill and oil the grate once it is heated. Grill the burgers for about 10 minutes, turning once, for medium. Remove the burgers from the heat source and lightly grill insides of the buns until just toasted.
4. Place a lettuce leaf and tomato slice on the bottom of each bun. Top each with a burger and a generous helpings of cheese sauce. Cover with bun and serve, passing the remaining cheese sauce to serve on the side.

the egg yoke is the binding, u just use the whole egg, ok 100 grams chopped garlic 20 grams chopped parseley, 800 grams mince, mix ingredients together then make into patties, let patties marinate in a sauce of your choice (barbeque sauce, mustard, soy sauce) then after a few hours of marinating in the fridge in a bowl through the patties on the barbie, serves 4

Just make sure that the meat is lean.. not too much fat content. Otherwise they will shrink alot. Believe it or not, i have found that the tastiest burger patties are just seasoned with regular salt and pepper. I know it doesnt seem like they would be but its actually really tasty.

Buy the best quality hamburger meat you can and form firmly into balls, flatten and add seasonings (salt, pepper, garlic powder) then throw them on the BBQ, Yummy!!!
