Where is it possible to get hold of a legal document she can sign releasing any further rights over the recording?

The recording is assumed to belong to the customer. No release is needed.

If you want to reassure yourself, you can write up a short line or two and fax it to her for signature, but she should already know the legallities if she's a pro. She may ask for permission to use a snippet of it on her demo reel.
