Tiny Pizza
Prep time: about 15 minutes
Ingredients:
1 standard-sized bagel, cut in half
tomato sauce
shredded mozzarella cheese
toppings like diced green pepper, chopped onion, or chopped tomato (whatever you like)
seasonings like oregano, basil, and pepper
Directions:
1. Set the oven to low heat.
2. Spread tomato sauce on each bagel half.
3. Sprinkle the shredded cheese all over the tomato sauce on each half.
4. Add your favorite toppings.
5. Put a light sprinkling of seasonings on each half.
6. Put your bagel halves on a baking sheet.
7. Bake in the oven on low heat for about 5 to 8 minutes. You'll know they're done when the cheese is bubbly.
8. Let cool for a minute, then enjoy your tiny pizzas!
Serves: 1
Serving size: 2 tiny pizzas

Easy and Elegant
Jumbo shells seafood
16 oz jumbo size past shells
1 can crabmeat, drained, flaked and any cartlige remove
1 can (2 ½ oz tiny shrimp, drained
1 cup (4 oz.) shredded swiss cheese
½ cup mayo (hellmans)
2 Tablespoon thinly sliced celery
1 tablespoon finely chopped onion
1 Tablespoon finely chopped pimiento
Add shells gradually to 6 quarts boiling salted water; cook until tender, yet firm. Drain; rinse with cold water, then drain again. Invert on paper towel lined plate to cool. Combine crab, shrimp, cheese, salad dressing, celery, onion and pimiento in medium-size bowl. If mix seems too dry, add more salad dressing. Spoon mix into cooled shells; cover and refrigerate until chilled.
For desert go pick up a keylime pie or cheesecake.

You didn't mention if you were brown-bagging it or having someone over. Here are some thoughts:
1. Ham and brie sandwiches on foccacia bread with arugula and great mustard
2. Chicken noodle soup (homemade if you can) in a thermos
3. Carrot and celery stix with dressing
4. Chocolate fudge cupcakes with sprinkles

1. Roast beef and cheddar sandwiches with horseradish cream on rosemary potato bread

3. Lemon bars
or
1. Chicken Chili with cornbread
2. veges and dip
3. Molasses ginger cookies
or
1. Chicken and asparagas bundles in crescent rolls (with chive and onion cream cheese)
2. Green salad with dried cranberries, candied walnuts, and feta
3. Chocolate cake
or
1. Crab and artichoke quiche
2. Baby lettuce salad with mandarin oranges, roasted cashews, goat cheese, and balsamic vinagrette
3. Giant chocolate chip cookies

Chicken salad on a croissant some chips and fresh fruit sounds good to me. If you can't do chicken salad, ham, turkey or chicken with cheese on a croissant always makes a nicer presentation that bread. Lemonade with a slice of fresh lemon or orange and a brownie. Good luck

Fajitas are really easy easy to make... buy some seasoning and some chicken and veggies
Dessert you can make a pie... buy a premade pie shell, and either pudding or fruit to fill it with, top off with some whipped cream.
