1. Crackers: Whole grain, Hawaiian Lavosh, Sesame Seed,
Cracked Pepper, Water
2. Sliced baguette, rye crisps, potato rosemary bread, sour dough
3. Crisp green or red seedless grapes
4. Fresh strawberries
5. Slices of meat such as turkey or roastbeef or ham
6. White or red wines
7. Champagne
8. Apple Pie

Cheese Salad
1/2 c Mayonnaise
1/2 lb Cheese; grated
Celery salt
Pepper to taste
12 Capers
Lettuce
Mix mayonnaise and cheese with seasonings. Form
into balls with butter paddles or 2 spoons. Serve
on lettuce leaves on individual plates, garnish
with capers. Pass more mayonnaise in a separate
bowl.
Cheese Souffle
3 tb Flour
3 tb Butter
3 Eggs; separated
1 c Milk
1 c Grated cheese
Salt
Pepper
Stir butter and flour together in a saucepan over
fire, without browning. Add the milk, a little at
a time, and stir till mixture boils. Add cheese,
salt and pepper, set side to cool. Beat the egg
yolks and add them to the mixture in the pan and
blend thoroughly. Lastly, beat the egg whites to a
stiff froth, fold into the mixture, and turn into
a deep well greased dish. Bake in a moderate oven
about 25 minutes, and serve at once, because it
soon falls and no one will be impressed.
Fried Goat Cheese Cigars
9 oz Fresh goat cheese; crumbled
1/2 c Chopped fresh parsley
1 Egg
1 tb Minced garlic
1 1/2 ts Paprika
1/2 ts Salt
1/2 ts Pepper
24 Wonton wrappers
1 Egg; beaten
Oil for frying
Mix cheese, parsley, egg, garlic, paprika, salt,
and pepper. Place a scant tablespoonful on each
wonton wrapper, in a strip along one edge, leaving
1/4" edge. Fold sides in and roll up. Brush edge
with egg and press to seal.
Heat 1/4 cup oil until hot. Fry 6 at a time, until
a deep golden brown, turning once, about 1 minute
per side. Add more oil to skillet as needed. Serve
hot.
Rarebit with Beer
1 lb Aged cheddar cheese
1 tb Butter
1 c Beer
1 ts Salt
1 ts Worcestershire sauce
1/2 ts Paprika
ds Cayenne pepper
1/4 ts Curry powder
1/4 ts Dried mustard
8 sl Tomato
Grate or grind cheese and add butter. Partially
melt cheese in a microwave on MEDIUM, stirring
frequently; stir in beer. Continue to heat and
stir until cheese is melted and beer is warm. Add
seasonings and stir.
