I have just mixed up a solution of strawberries and honey with some sugar, in preparation for the addition of yeast. Does anyone know if there is anything else I should add in order to make the taste and acidity better for fermentation?

Strawberry Melomel

Recipe Ingredients
This recipe makes 23.5 litres Kg wild flower honey, 5.75 kg strawberries, Yeast nutrient, Irish moss, packet champagne yeast, Pure spring water to fill

Recipe Process
Divide the strawberries between two carboys. Pasteurise the honey in 2 litres of water for 20-30 minutes skim off scum.Add the Irish Moss as per instructions for the last 15 minutes of the boil. Add a little water in each carboy to prevent glass from cracking and divide the honey mixture evenly between carboys. Add yeast nutrients and fill carboys to 13.5 litres each with water. After twice racking the melomel was ready. Wassail. Original Gravity=1.120. Final Gravity=1.000

Not sure,

I have tried hunny wine before with strawberries, its the only wine I actually like.

Campden tablets is not a clarifying agent. You're thinking pectic enzyme.

You should also use a little tannin.
