Here are a couple for you to try...

Carrot Salad

3 cups julienne carrots
1 (20 ounce) can pineapple tidbits, drained
1 cup miniature marshmallows
1/2 cup raisins
1/2 cup diced celery (optional)
2/3 cup salad dressing (e.g Miracle Whip Tm)
2 teaspoons sugar

In a large bowl, toss together the carrots, pineapple, marshmallows, raisins and celery. Whisk together the salad dressing and sugar; pour over salad and toss. Chill for at least 12 hours.

------------AND...

Carrot Raisin Salad

3 cups shredded carrots
1/2 cup raisins
1/3 to 1/2 cup mayonnaise
1 tablespoon lemon juice
1 tablespoon brown sugar
Dash salt

* Optional: 1 cup chopped apple, or well drained crushed pineapple, or 1/2 cup chopped celery

You can shred the carrots in a food processor, or by hand using a cheese shredder. It usually takes about 5 or 6 carrots to make 3 cups, but measure it as you go along, to be sure. A little more carrot is preferable to a little less. While the carrots are shredding, soak the raisins in a cereal bowl of warm tap water. This plumps them up so they taste better in the salad. After soaking for a few minutes drain them and squeeze them dry with your hand. In a medium sized mixing bowl, combine the shredded carrots, raisins, mayonnaise, lemon juice, sugar, and salt. Add one or more of the optional ingredients if you feel so inspired. Mix it all up and chill it until serving time. This is good to serve up with hot foods in the winter time when you need a cold salad to balance out the menu. If this recipe makes too much, you may cut it in half or thirds.

Old-Fashioned Carrot Salad

2 bunches carrots
1 cup good mayonnaise
1/2 golden pineapple, peeled and chopped
1/2 cup raisins
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Peel the carrots and grate them in a food processor fitted with the large grating attachment. If you lay the carrots on their sides in the feed tube, you will have nice long grated strands.
Place the grated carrots in a large bowl and add the mayonnaise, pineapple, raisins, salt, and pepper. Toss well and season to taste. Serve chilled or at room temperature.

The easiest one I know is:

6 large carrots, grated
1 cup sultana raisins
1/2 cup crushed walnuts
1/2 cup honey
1/2 cup miracle whip(salad dressing)

mix all ingredients together and refridgerate overnight

1/2 cup raisins
1 cup boiling water
1/2 cup shredded coconut
1/2 cup pineapple tid bits
1/4 cup grated Granny Smith apple (**optional)
1 cup mayonnaise
2 lbs. shredded carrots

Place raisins in boiling water for 3-5 minutes to "plump" them up. Drain. Drain pineapple thoroughly. Mix all ingredients together and chill for 5 hrs. or better still...chill overnight.
