Mostly for longer shelf life and lower costs of shelfing the product ( no refrigeration or freezing storage)
But also it is getting more important than ever to prevent even guarantee freedom from pathogens (bacteria) from our foods. The recent E.coli infections in meat and even fresh salads where there is no kill step.

Theoretically irradiating food will eliminate the dangerous microbes and bacterias found in trace amounts. That way the food would have a longer shelf life, or would be safer for it's normal shelf life.
