Properly, the term jam refers to a product made with whole fruit, cut into pieces or crushed. A jam is a thick mixture of fruit and sugar (and often pectin) that is cooked until the pieces of fruit are very soft and almost formless -- the texture of a thick purée. The heated water and sugar activate the pectin in the fruit. The mixture is then put into containers.

Jelly is made by a similar process, with the additional step of filtering out the fruit pulp after the initial heating. A cloth "jelly bag" is traditionally used as a filter.

A preserve is almost identical to a jam but preserves can contain large chunks of fruit or whole fruit.

A Jam is usually fruit pulp, with gelatin to hold it's shape. It will often contain chunks of fruit and seeds.

A jelly is the juice from fruit with gelatin.

Both also contain massive quantities of sugar.

Preservatives are ingredients added to prevent food from spoiling.

If you meant "preserves" that is any type of canned food really. By canned I'm referring to the old method of preparing the food with preservatives and putting it in jars and sealing them. This was often done with fruit and vegetables. Pickles are really just cucumber preserves. Meat could be canned, but was usually smoked, salted or dried.

jam is essentially fruit that has been cooked to a puree and jarred where as jelly is made with fruit juice and gelatin. Preserves however, is like jam with large pieces of fruit.
