Put a small amount of corn syrup in with it... it will help prevent the crystallization of the sugars. Also, heat very very slow and constantly stir.
Melting chocolate is tough... don't fret.

Chocolate can't be mixed. Get the chocolate in a pot, and put that pot into another pot filled with water. The big pot is full of water and a smaller pot is full of chocolate. heat the water and make sure not even a drop touches the chocolate, that should melt the chocolate just fine.

Dont melt it with butter, If you need butter in it melt the chocolate first than add butter, you also could get a fondue maker.

why are you adding butter?
Just melt the chocolate in a double boiler.... Then dip the strawberry into the chocolate.

Put a pyrex bowl on top of a pot of water. It will allow for the chocolate to melt slowly and evenly. It should have a nice, creamy consistency.

dont melt it directly with your pan on fire. get a medium size pan, put a cup of water and boil it, when it starts boiling put another pan or mixing bowl on top of it, put the butter and chocolate in it, then there you go. you melt it without putting it on direct heat. just the steam will melt it.

when i dip strawberries i just put chocolate chips into a bowl and zap them in the microwave for a few minutes

if you are using the microwave, put the chocolate in one small glass bowl, then put that bowl in a larger glass bowl of water. stir every 30 seconds. it takes time but you have to do it slowly and dont get ANY water in the chocolate. use a dry spoon.

quit adding butter to it. Maybe a Tbsp of hard shortening....
Just nuke choc. chunks as-is in the microwave. You could add a small splash of whipping cream if you want to thin in out a tad, but no more than a Tbsp. and dont' sub Half and half or milk!
