Hello all, was just wondering if anyone knows of a good strawberry truffle recipe! having a party on Saturday just wanted to try it Thanks !

Strawberry Truffles

1 (8 ounce) package cream cheese, at room temperature
4 cups powdered sugar
1 teaspoon grated fresh ginger
6 ounces white chocolate, melted and cooled (use dark chocolate, if desired)
20 medium strawberries, cleaned and hulled
1/4 cup crystallized ginger, finely minced
1/2 cup toasted coconut (see note below)
1/2 cup pistachio nuts (or other nuts)

Beat the cream cheese, sugar and grated ginger until smooth. Add the white chocolate and mix well. Chill at least 1 hour or until easy to handle. If necessary, place in freezer, stirring occasionally, for 30 minutes.

Using a very small melon baller, scoop out the center of each strawberry halfway down each fruit. Pat berry dry inside and out. Put a small amount crystallized ginger into each strawberry. Shape the cream cheese mixture around each fruit.

Coat one end in coconut and the other end in pistachio nuts(or other nuts). Place the truffles in candy cups. Chill until serving time. Enjoy!

Note: To toast coconut, heat in a dry skillet over medium heat until it starts to brown. Stir occasionally. Be careful not to burn.

Strawberry Fudge Truffles

1 (6 ounce) package semi-sweet chocolate chips
1 (8 ounce) package cream cheese, at room temperature
3/4 cup vanilla wafer crumbs (approximately 20 wafers)
1/4 cup strawberry preserves
1/2 cup almonds, toasted and finely chopped

Melt chocolate over low heat in small saucepan.

Beat cream cheese in medium mixing bowl until smooth and creamy.

Add melted chocolate, beating until smooth.

Stir in vanilla wafer crumbs and preserves; mixing well.

Cover and chill mixture for 1 hour.

Place almonds in small bowl.

Remove chocolate mixture from refrigerator and shape into 1-inch balls.

Roll each truffle in almonds; chill until serving.

I'd try 'em both if I were having a party!

1 tsp. grated fresh ginger root
18 medium fresh strawberries
1/4 cup finely minced crystallized ginger (get it in a gourmet food store or well stocked supermarket)
1/2 cup toasted coconut
1/2 cup finely chopped pistachio nuts





Makes about 18 truffles

Melt white choclate in the top of a double boiler, let cool.

Beat together the cream cheese, sugar and ginger root until smooth. Add melted white chocolate and mix well. Chill for at least 1 hour or until easy to handle. Use a small melon baller (or small spoon) to scoop out the center of each strawberry, half way down each fruit. Pat strawberry dry. Put a little crystallized ginger into each strawberry. Shape the cheese mixture around the fruit. Coat one end in the toasted coconut, the other in the pistachio nuts. Place truffles in candy cups and chill until serving time.

Ingredients

20 oz 70% cocoa content chocolate
1 cup cream
1 tablespoon balsamic vinegar
1/4 cup dehydrated strawberries
1 tsp cornstarch
Makes 40 truffles.


Directions

Break up 11 ounces of the chocolate into smaller pieces. Put pieces into a blender and pulse into fine bits.

Bring cream to a simmer, while stirring constantly. Remove cream from heat and add balsamic vinegar to the hot cream (but not simmering anymore).

Add hot cream with vinegar into blender already filled with chocolate bits and blend for 15 seconds.

Pour the mixture (also called ganache) into a glass loaf pan. Cover pan and let cool at room temperature. Once the truffle ganache has set to a firm consistency, refrigerate for several hours. Cover well before refrigerating.

Scoop out portions with an ice cream scooper or big tablespoon and create thumb tip sized truffle pieces. Once the truffles are done, it's time to coat them with fine chocolate.

Prepare a double boiler. Chop the rest of the dark chocolate into fine pieces and heat carefully until melted.

Remove from the heat and stir. Now coat the truffles as thinly as possibly with the warm (not hot) chocolate.

Prepare the dehydrated strawberries. Blend them until they are in powdered form. Add corn starch and stir.

Drop the chocolate-coated truffles into the bowl of strawberry powder. Shake gently to coat.

Allow the outer shell to set before gently removing the strawberry powdered truffle. Now place the finished truffle onto a non-stick surface and let settle for a few more minutes.
