Only arrogance can explain this. There is no creature greater or lessor than any other. We are all successfully evolved to fit the current environment. Let's hope most of us can still adapt as the climate changes.

Simply being human doesn't make anyone think they are superior. As noted by the several answers above, some think so "just because" and some don't think so "just because" and/or because they think that humans are nothing more than (perhaps) enlarged amoebas -- nothing more and nothing less than a worm or a cat or a bear.
However, all of the above have the arrogance to believe that they themselves are the source of knowledge and truth. I defer to the Creator, who has said in His Word that the human being is created in His own image, in His likeness. Male and female created He them, and gave them dominion over the creatures of the air, the sea, and the land. I believe that history bears out that whether heathen or believer, we all show the command that is in us, and we live it out. We seek to control (whether for good or bad) our environment. There is a right way to do it and a wrong way to do it. Most of the time we're trying to do it the right way, and we just blow it, because we're too busy thinking that we're the source of truth, rather than listening to our Creator God.
Think of it this way. You and I look at a sunset and we can see it is beautiful. Its maginificence "inspires" us. A cow looks at the same sunset because it's the brightest spot in the sky ... or not. The cow is not concerned with the beauty of anything; neither is an elephant; nor a dog; nor a fish; nor a diatom. None of these wonder why they are here. None of these make hospitals to care for their sick. None of these write music or poetry or make a quilt. None of these thinks the sound of a fart is funny. But we do.
If you want to see the "crown of creation" look at a beautiful woman. The evolutionist would have you and I believe that a beautiful woman is an "accident". Yeah. An accident.
Jesus said, "You know that four sparrows are sold for a penny. Yet your Father in Heaven knows when one falls to the ground. How much more will your Father care for you, when you are worth more than many sparrows?" (paraphrased). The athiest is left with either calling Jesus a liar, or attempting to bring into question the authenticity of the words of Jesus (or even their actual meaning) in order to justify his absurd position of chaos, nothingness, and the meaninglessness of life on earth, and especially of the superior nature of the human race as compared to the other creatures.
Sorry for the short novel. I never tire of making fun of athiests.

Anyway, I think we are superior for several reasons from different view points.
First off, as a Christian, I believe mankind is superior because God has endowed us with souls, something that he never gave to animals. Also because God did give mankind dominion over the earth, I don't think this gives us a right to abuse it, as many people do.
From just my rational perspective, I see mankind has superior because we have the ability to reason, while an animal is a slave to its instincts. A humans instinct might say one thing, but our mind and rational faculty tell us differently and we go by that. Humans also have a moral faculty and an ability to recognize rights in another person, while an animal can be neither moral or immoral because they have no concept of right and wrong.

We are the most intelligent species on earth, but I don't think the human race is very intelligent.
There are plenty of reasons to consider other species superior, like, the way wolves stick together, would die for another member of their group. Watch how ants function. There is a beetle that can shoot fire from it's ***.
Humans are not a very advanced species in any way. We don't stick together. We don't work together very well for the most part. Most people are dumb as rocks. Most people have serious mental problems. We don't have any physical advantages over any other species. Name a positive trait that humans possess, other than intelligence, and there is an animal that is more advanced.

How do you define superior? The shark has existed virtually unchanged for over 50 million years. Humans can't even begin to compete with it in terms of survival success.

We are most likely to be the most intelligent species in terms of mental capacity. We also fortunately have the dexterity to make our technologies which have enabled us to take over the plane t and conquer the large majority of environments.
Whether or not we should view ourselves as 'superior' is something highly debatable.
