I think it turns out so poorly is that egg replacer isn't going to do the trick here, at least not without some other binder. The eggs are want makes the lemony part the right (custardy) consistency.

Super Simple Lemon Bars
servings 6
1 pkg. angel food cake mix -- one-step mix kind
1 can lemon pie filling -- (22 oz)
Preheat oven to 350°. Mix lemon pie filling with dry angel food cake mix in large bowl. Bake in a greased jelly roll pan for 30 minutes.
If desired, bars can be topped with nuts or coconut before baking, but remember to add the points if you add the nuts. Cool and cut into 30 bars.
(estimated WW POINTS per serving 2)

Lite Lemon Bars -Diabetic recipe
1 - Angel food cake mix
1 - sm. box sugar free
instant vanilla pudding
1 - sm. box sugar free
lemon jello
Pre-heat oven to 350.
Prepare pudding according to directions on the box
Let it set up. After the pudding sets, stir in dry lemon jello.
Mix dry angel food cake mix into above ingredients and stir together.
Place into well sprayed 9x13 pan. bake at 350 for about 35 minutes.
Check with toothpick test.
Cool..sprinkle with powdered sugar thru a sieve.
(I use skim milk in my pudding also and I buy the fat free angel food mix or low fat)

Ingredients:
1-1/4 cup flour, divided
1 cup sugar (or substitute)
1/3 cup margarine, soft
1/2 cup egg substitute
2 teaspoons lemon peel
1/4 cup lemon juice
Directions:
In medium bowl, combine 1-cup flour and 1/4-cup sugar.
Cut in margarine until mixture is crumbly.
Press into bottom of a 9-inch square pan.
Bake at 350-degrees for 15 minutes.
In small bowl, combine egg- substitute, lemon peel, lemon juice, remaining flour and sugar.
Pour over prepared crust.
Bake for 15 minutes or until set. Cool.
Sprinkle with powdered sugar before serving, if desired.
Yield: 32 bars

Lemon Squares
Crust:
1/2 cup vital wheat gluten
1/2 cup almond flour
1/2 cup Maltitol
1/4 teaspoon Stevia
1/2 cup real mayonnaise (not salad dressing)
Filling:
2 eggs
1/2 teaspoon baking powder
1 cup Maltitol
4 tablespoons lemon juice
1 teaspoon lemon zest
1 tablespoon vital wheat gluten
1 tablespoon almond flour
pinch of salt
Makes 16 Servings
Preheat oven to 350° F. Work all five crust ingredients together and press into a 9 inch square glass baking dish, that has been prepared with a spray oil. Press up the sides 1/2 inch. Bake for 10 minutes.
While crust is baking, prepare the filling by mixing together filling ingredients in a blender. Remove crust from oven after baking for 10 minutes and pour filling immediately onto hot crust. Return to oven for 15 minutes or until a knife inserted in the center comes out clean. Dust with powdered Maltitol while still hot. Chill thoroughly, then cut into 12 -16 squares.

Luscious Sugar-Free Lemon Bars
1 cup purchased graham cracker crumbs, plus
2 tablespoons purchased graham cracker crumbs (or make your own)
1 1/4 cups Splenda sugar substitute
1/4 cup reduced-calorie margarine
2 eggs or 1/2 cup egg substitute (equivalent of 2 eggs)
2 tablespoons nonfat sour cream
1/3 cup fresh lemon juice
1 tablespoon all-purpose flour
1/4 teaspoon baking powder
Preheat oven to 350 deg.
Spray 11 x 7 biscuit pan with cooking spray.
In medium bowl combine 1 c. crumbs, 1/4 Cup Splenda and margarine.
Mix until mixture is crumbly.
Carefully pat into bottom of buttered pan.
Bake for 5 minutes and remove.
In the meantime, beat the eggs until they are foamy (this is important when using splenda).
Stir in sour cream and lemon juice.
Add reamining 1 cup of splenda, flour and baking powder.
Mix well to combine and pour over baked crust.
Bake another 10 minutes.
Evenly sprinkle remaning 2 Tbsp. graham cracker crumbs over top.
Lightly spray crumbs with butter flavor cooking spray Continue baking for 8 minutes more.
Cool on wire rack for at least 10 minutes.
