Greek Roast Chicken and Potatoes

Chicken pieces and quartered potatoes are baked in water
with butter, lemon juice and oregano.Ingredients:

• 4 pounds chicken pieces
• 10 medium potatoes, peeled and quartered
• Juice of 1 lemon (about 3 Tbsp)
• Dried oregano
• 1/2 cup butter (1 stick)
• Salt and pepper
Method:
Place chicken pieces and potatoes in a 9x13 inch baking dish. Dot with butter. Sprinkle oregano generously over the top. Add 1 1/2 cups water. Season with salt and pepper. Sprinkle lemon juice over all. Baste occasionally while cooking with pan juices. Bake at 350 degrees for 1 hour.
Notes:
Serve with a Greek salad and some fresh pita bread.

Southern Oven Fried Chicken
9 chicken pieces (3 thighs, 3 legs, 3 breasts)

1 C. dry breadcrumbs

1/2 C. melted butter

1/2 C. parmesan cheese

1 t. basil

1/2 t. oregano

1/4 t. seasoned salt

1/2 t. pepper

Preheat oven to 375° F. Coat the bottom of a baking pan with oil spray.

In a shallow bowl, mix together the crumbs, cheese, basil, oregano, salt and pepper.

Coat the chicken with the melted butter. Roll the chicken pieces in the crumb mixture. Place skin side down on the baking sheet.

Spray the chicken with the oil spray lightly. Bake for 20 minutes and then turn over the chicken. Bake another 20 - 30 minutes until chicken is done and the juices run clear.

there are several different options...you can season it with salt & pepper and bake it brushing some melted butter on the outside to crispen the skin. think of it this way....it's a very small turkey. you can always braise the chicken by putting in a roasting pan and putting the chicken broth in so that it is half way up the pan and cook covered. this will keep it moist but will not have a very good color. i would choose the first option and if you have any stove top stuffing or feel adventurous to make some you can. you can also serve with mashed potatoes and that would be good too. i would stay away from baked as I view baked potatoes as taking the easy way out.

This is quick and easy. A family favorite.

Saturday Chicken
5 servings

10 chicken thighs (or whatever you prefer)
1 can condensed cream of mushroom (or cream of chicken)
1 cup of cream (dont cheat and use milk; the cream makes a lot of difference)
salt, garlic powder, and paprika- to taste
chopped parsley

Season chicken with salt, garlic, and paprika. Next, spread it out, in one layer baking pan. Dilute the soup with the cream; pour it over the chicken, and sprinkle parsley on top.
Bake , uncovered, at 350' for 1 hour or until juices run clear when chicken is pierced with fork.
Makes a delicious gravy. Serve with mashed potatoes or buttered noodles or rice.

Spicy chicken fingers

Dip chicken tenders in light olive oil with a few drops of hot sauce mixed in. Then dip them in a mixture of equal parts parmesean cheese and bread crumbs, a generous pinch of dried italian seasoning, fresh ground pepper and salt and some red pepper flakes. Bake at 350 for 15-20 minutes.

If you aren't a spice fan, you can eliminate the hot sauce and pepper flakes. You can also add additional spices to the crumb mixture, like garlic powder, onion powder, paprika, etc.

The quick dip in olive oil helps the chicken to brown and become crispy, without the extreme greasiness that frying it would provide.

Carmelized Baked Chicken

INGREDIENTS
3 pounds chicken wings
2 tablespoons olive oil
1/2 cup soy sauce
2 tablespoons ketchup
1 cup honey
1 clove garlic, minced
salt and pepper to taste

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Place chicken in a 9x13 inch baking dish. Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper. Pour over the chicken.
Bake in preheated oven for one hour, or until sauce is caramelized.

Baked Buffalo Chicken Wings:

Most of us think of Buffalo wings as bar food, but with their accompaniment of celery sticks and creamy blue-cheese dressing, they make a fine casual meal. These wings are hot, but if you like them incendiary, pass extra Tabasco sauce at the table.

4 pounds chicken wings
3 tablespoons cooking oil
4 cloves garlic, chopped
1 3/4 teaspoons salt
1 1/2 teaspoons cayenne
2/3 cup mayonnaise
1/3 cup sour cream
1/4 pound blue cheese, crumbled (about 1 cup)
2 scallions including green tops, chopped
5 teaspoons vinegar
1/4 teaspoon fresh-ground black pepper
1/4 cup ketchup
1 tablespoon Tabasco sauce
8 ribs celery, cut into sticks

1. Heat the oven to 425°. In a large bowl, combine the wings, oil, garlic, 1 1/2 teaspoons of the salt, and the cayenne. Arrange the wings in a single layer on two large baking sheets. Bake until just done, about 25 minutes.

2. Meanwhile, in a medium glass or stainless-steel bowl, combine the mayonnaise, sour cream, blue cheese, scallions, 1 teaspoon of the vinegar, the remaining 1/4 teaspoon salt, and the black pepper.

3. In a large bowl, combine the ketchup, the remaining 4 teaspoons vinegar, and the Tabasco sauce. Add the wings and toss to coat. Serve the wings with the celery sticks and blue-cheese dressing alongside.

Menu Suggestions: Pair these wings with more finger food. Corn on the cob would go nicely. Roasted potato wedges are a good alternative and can be cooked alongside the wings.

Boneless chicken with cream of mushroom soup poured over it. Bake approximately 30-45 minutes at 350 degrees. You can have mashed potatoes and some peas to go with it for a complete meal.

Oven Fried Chicken

Make three "dipping stations"

Season the chicken with all purpose seasoning.
Cover in first bowl which you have filled with flour & a little extra seasonings

Dip in second bowl which contains two eggs beaten.

Cover in third bowl which has bread crumbs in it!... Italian or whatever style you like.

Simply place it on a cookie sheet in the oven at 350degrees truning after 15 minutes for a total cooking time of 24-30 minutes.

This is easy and delicious! Make it into chicken parm by topping with hot marinara sauce, sprinkling cheese on top and serving with pasta. Make it Southern & serve it with potatos and corn. Mauke it super healthy and have it with veggies and brown rice!

My favorite baked chicken.

Take chicken breast and make sure they are clean and the skin removed.
In a bowl mix parmasean cheese, salt, garlic powder and flour.
Dip each chicken breast in the flour mixture coating the breast on all sides.
Preheat oven to 350 degrees.

Place Chicken breast on a greased cookie sheet and bake at 350 until the coating begins to turn slightly brown. The chicken breast should be bright white on the inside.

Make spagetti according to the directions on the box, adding your favorite spagetti sauce.

Place one Breast on each mound of spagetti.
