Chicken Taco Salad:

Taco salad was made for the crunch and texture of iceberg lettuce--or maybe vice versa--but in a pinch, romaine could stand in.

3/4 cup bottled salsa
3 tablespoons white wine vinegar
1 teaspoon sugar
1/2 teaspoon ground cumin
1/4 teaspoon dried thyme
1/4 teaspoon bottled minced garlic
Dash of ground red pepper
1/2 pound skinned, boned chicken breast, cut into 1-inch strips
1 cup halved cherry tomatoes (about 12 tomatoes)
1 cup canned kidney beans, rinsed and drained
1/4 cup minced fresh cilantro
1 tablespoon olive oil
Cooking spray
4 cups coarsely chopped iceberg lettuce
1 cup (4 ounces) shredded reduced-fat cheddar cheese
32 low-fat baked tortilla chips

Combine the first 7 ingredients in a bowl. Combine 1/2 cup of salsa mixture and chicken in a zip-top plastic bag; seal and marinate in refrigerator 30 minutes. Add the tomatoes, beans, cilantro, and oil to remaining salsa mixture; cover and marinate in refrigerator 30 minutes.

Place a medium nonstick skillet coated with cooking spray over medium-high heat until hot. Add chicken mixture; saute 5 minutes or until chicken is done.

Place 1 cup lettuce on each of 4 plates; top each serving with 1/2 cup bean mixture and one-fourth of chicken mixture. Sprinkle each serving with 1/4 cup cheese. Serve each salad with 8 tortilla chips.

Yield: 4 servings

In a bowl add your meat, shredded lettuce, finely chopped cauliflower, shredded chedar cheese, chopped green peppers, and a bag of corn chips.

Ok here what I do and my husband and kids love it. Buy a taco kit and do just like it tells you only add a little chili powder to your meat mixture while you are browning your meat. When that gets done and you add your water and seasoning to it to simmer add one can of whole kernel corn. Let it simmer just like it says. Crush your taco shells and layer them in the bottom of a casserole dish. Add your meat mixture and top with lettuce, cheese, sour cream, and tomatoes(if u like tomatoes whick I do not). It is absoultely great and very easy not to mention inexpensive. YUMMY!! Good luck and let me know how you like it.

thid might sound a little weird but its Good! layer all these ingredients: ranch style beans, cooked hamburger meat, lettuce, tomatos, cheese, crushed fritos, pour Green goddess salad dressing on after each round of layers. at the end top with shredded cheese. I know the green goddess sounds weird... but it really is tasty. Of course you can serve it with salsa for a kick.

I usually use Doritos for the crunch. Then I put the hamburger that has been seasoned on it, along with the usually toppings such as lettuce, cheese, tomatoes, and sour cream. I also put white rice in mine, along with Ranch dressing. Its really good. Good luck with your recipe hunt. Happy Eating!

Try Frito corn chips, the small ones. They'll be salty and fattening but oh so good! And for added kick, try the chili and lime flavor.
