I have it ready to go but I need seasonings for even sides.. Please help me. cooking is not as easy as I thought.

flour (season with salt, pepper,cayenne peper or paprika) light flour the fillets and fry with olive oil about 1tbs. per fillet
on a separate pan 2tbs. olive oil 4tbs.minced garlic 1 cup. lime juice (green ones) and a bunch of parsley heat the garlic with the oil without burning medium heat when hot add the lime juice for about 30 sec. then the parsley wisk and spoon over fish

Red Snapper Recipe

Ingredients

• 4 Red Snapper Fillets about 1 lb. each
• 6 Tbs Butter
• 3 Tsp. Garlic-five cloves finely chopped
• 3 Limes
• 1 Tsp. Hunters Seafood Seasoning

Melt butter and saute garlic in it until soft, approximately 3 to 5 minutes. Cut in half 2 limes and squeeze the lime juice into the garlic butter. Using a basting brush, coat both sides of each snapper fillets with the butter mixture. Sprinkle fish seasoning and salt evenly over snapper fillets to season. Place snapper fillets directly on your tinfoil-covered grill & grill snapper fillets for about 10 minutes, basting occasionally with the remaining butter sauce. Carefully turn the fish on the grill and cook another 10 minutes. When completely cooked, the flesh should be opaque in color and easy to flake with a fork. Garnish snapper with thin slices of the 3rd lime. 1/2 Tsp. Salt This

1.) Melt butter in a pan. Do not allow butter to brown.
2.) In the melted butter, squeeze the juice of 2 lemons. If the fish is more than 2 pounds add a thrid lemon.
3.) With a basting brush baste the inside of the fish with the lemon/butter.
4.) Sale and Pepper to taste.
5.) Bake fish at 350 until flaky.

These two are my favorites
Blackened Red Snapper
Ingredients

• 2 red snapper filets, halved
• 1/2 cup margarine
• 2 tablespoons lemon juice
• 1 tablespoon parsley, minced
• 1 teaspoon paprika
• 1/8 teaspoon cayenne
• 1/8 teaspoon salt
• 1/8 teaspoon garlic salt
• 1/8 teaspoon thyme
• 1/8 teaspoon onion salt
• 1/8 teaspoon oregano
• dash of black pepper

Mix together paprika, cayenne, salt, garlic salt, onion salt, thyme, oregano, and pepper. Sprinkle over each side of the snapper. Oil grill grate and preheat. Bring lemon juice to a boil. Remove from heat and add margarine. Mix well. Carefully place snapper filets on the grill. Cook snapper until done. About 4 minutes per side. Remove snapper from grill. Add parsley to lemon butter. Spoon about 1 1/2 tablespoons of butter mixture over each piece of snapper and serve.

Red Snapper Vera Cruz
Ingredients

• 4 red snapper fillets (4 ounces each)
• 1/4 c fresh lime juice
• 1 T fresh lemon juice
• 1 t chili powder
• 1 plum tomato, coarsely chopped
• 4 green onions, sliced in 1/2 inch lengths
• 1/2 c chopped Anaheim pepper
• 1/2 c chopped red bell pepper
• cilantro for garnish

Place red snapper in a shallow baking dish. Combine lime juice, lemon juice and chili powder in measuring cup. Pour over snapper. Marinate snapper 10 minutes, turning once or twice. Sprinkle onions, tomato and peppers over snapper. Cover. Bake at 350 for 30 minutes or just until snapper flakes in center. Let stand, covered, 4 minutes before serving. Garnish with fresh cilantro

If it is fillets poach in milk and remove to a warm place.
Make up a roux of butter and flour and return the milk to the pan until you have a consistency to your liking.
Add some parsley.
Either flake the cod and return to pan or return fillets until hot again.

Bread the fillets and saute in oil.

You can add some garlic cloves, sliced and diced.
