The Canon 1Ds Mark II DSLR has full frame 16.7MP capability and is considered one of the preferred professional cameras. There is a Hassleblad DSLR with 39MP, both exceptional cameras, both full frame and capable of poster and canvas reproductions. It depends mostly on how much money you wish to spend, at the low end the Canon will set you back about 5 to 6 grand, the Hassleblad will go for about 20 grand and that is without lenses for both. Of course, you can get a poster size image from most DSLR's 8MP and higher for a lot less money like the 30D (8.2MP) and 5D (12.8MP) for Canon and the Nikon D200 (10.1MP) all of which are used by the pro's and cost under 3 grand.

They're using the Nikon N100 and the Canon equivalent -- they basically look like the old 35mm SLR cameras but they're digitals. Not sure about the megapixel rating, but they don't use point-and-shoot digital cameras. Try Googling the Nikon N100 and that'll give you an idea of the type of gear the pros use.
