French soft cheese continues maturing so you could call it alive. American cheese is a bit like cardboard so you could call it dead. Just which do you prefer?

Its not a weird question. Its a matter of the enzymes used in it. If it has live enzymes, like yogurt, then yes, it would be a live food. As long as things are not heated above 107 degrees, the enzymes are retained. What he means is that american cheese has been processed, which kills off the enzymes. Microbial enzymes are added into it, along with rennet (which is from the 4th stomach of a slaughtered male calf-veal) Many french cheeses are made with raw goat, sheep, or cows milk, and would be considered a live food. I make raw cheese with milk straight from the cow. Depending on the type of cheese, I dont refrigerate it, but keep it in a cheesekeeper. Hope this helps clarify it. I do consider my raw cheese to be live food.

Cheese is actually 'alive' ... it's made from living 'cultures' and they are still 'alive' in that cheese ... but that is WHY I put the cheese in a 'cold box' ... I want to keep the cheese 'fresh' and not let it get all moldy ... and now I think I'm going to go cut some cheese (Tillamook Extra Sharp Cheddar) for my lunch ... WITHOUT APOLOGIZING to it at all. It's a 'culture' not an ANIMAL and I don't 'know it's name' ...

It's true. American cheese is really not even cheese. You'll notice that it's labelled "cheese food" on the package. Blue cheese is alive because it has mold growing in it. Most cheese tends to clog your intestines and your arteries. My doctor told me to give it up and eat more raw fruits and vegetables.

It depends on the cheese.

Some cheeses have active bacterial cultures in them (bleu cheese for one).

Discounting the bacteria growing in them, ALL cheese is "dead," as it was never "alive" to start with.
