I've never had it before, but I'd like to try it. I found a recipe in one of my cookbooks for it. Just wondering if gazpacho by itself would be a healthy lunch option?

Absolutely. It's chock full of fresh vegetables and the small amount of oil that is used is olive oil.

It's very healthy. Think of it as a salad in a soup. You might want to add a whole grain bun at the side. If all you're having at lunch is gazpacho, be sure to have protein with your supper.

I have also never had gazpacho, but I definitely would consider it a healthy lunch option.

Oh yea, it's really healthy. Just be sure to get enough protein, possibly by adding meat or something.

its super healthy, and very delicious. It would make a great lunch. I miss it soooooo much-I developed an allergy to tomatoes, among other things, and can no longer have it. I am sure you will enjoy it. Have some for me, would you?

Very healthy. (I prefer hot soups, myself). In the interest of energy in the middle of the day, you may want to include some form of protien like grilled chicken in a half of a wheat pita.
