First I want to say thank you to this community. I have gotten some terrific answers to my questions. Yes, there are a lot of idiots out there, but my experience with sincere questions is reasonable responses. Here goes; I recently had Onion soup prepared with bouillion that was made from roasted chicken. It is restaurant quality and they carry a beef one too. Most bouillions are nothing but salt and a little fake flavor. This one was excellent. Does anyone know the name of this? I'd like to order some. Thanks in advance.

Instead of boullion, try looking up "chicken base". That'll be the paste. It is so much better than boullion powder. The brand I used at the restaurant was Nugget, but that may only be for restaurants. But base is always the paste.

Try making it yourself.
Get some beef bones that still have some meat on the from your butcher.

Brown them a few at a time until they are caramelised and place into a casserole dish.
De-glaze the pan with a little water and scrape off all those wonderful flavours and pour over bone.
Add enough water to cover bones and cover casserole dish.
Cook at 150% for about an hour and remove bones. Pour the liquid through some cheese cloth into a jug and leave to cool, then skim any fat off.
Season to taste.

The bones can be scraped of the meat for a snack, to add to rice, or fed to the dog or cat.

I use "Better Than Bullion". It's available in the major grocery stores here in Colorado. It's a paste and tastes like real drippings. It is not salty like the cubes or powders. It's great for soups, gravies, au jus, and sauces. It costs about $3.50-$4, but 1 TBS makes 1 cup of broth, so it goes a long way. I hope this helps.

There's a more expensive 'bouillon' called Better Than Bouillon. It's in a glass jar and is sold in grocery stores and Williams Sonoma. It's not your typical cube bouillon. It's more like a saucy paste. That might be what you're looking for.
