Easy - curry! It does require some ingredients beforehand, but both last a long time in your pantry so no need fearing they will go bad.
To make enough for a family of 4 (or 2 hungry people, with some leftovers):
1 can light coconut milk (from the "ethnic foods" aisle)
1 baggie yellow curry powder (not the grocery store brand, that stuff is NAS-TAY.)
1 small bag of whatever kind of rice you like (I prefer brown, but you may like saffron or white)
a mix of vegetables, chopped into bite-size chunks, about 1/2 cup per person served
1 tbsp olive oil or vegetable oil
NOTE: You'll need a rice cooker, a large, flat bottomed pan, a spatula. You can pre-chop the vegetables the day before, whenever it's convenient, and stuff them in a baggie to make life even easier! I don't recommend sweet things like carrots be cut very fine, as they make the overall curry sweet. Use fresh or frozen vegetables, as canned ones are too mushy to be pushed around easily.
Start the rice according to however your rice cooker works. It should take between 1 hour and 1 1/2 hours.
Put the oil and 1 tbsp (to start) into pan and heat on medium. When the pan is hot, dump in just the vegetables and stir around til fully coated with the curry powder and oil. If you have onions in your pan, they will be translucent when they're done.
Leaving the vegetables in the hot pan, pour the can of coconut milk into the pan. Stir it around, adding more curry powder if it seems too weak on spice. (mine are usually a deep brassy golden color.)
Turn to low/simmer, put lid on, and leave to cook for 45 min to an hour. (Go check your email, change into jams, take a shower, etc.)
Your rice and curry should be done at roughly the same time. Put rice into bowl, add steaming curry on top and enjoy! :9
(It seems like this recipe takes a while. It does. But most of that time is just cook time, where you can be off doing other things. I'd say the total prep time is 15 min, and you can expect to eat roughly 1 hour after that.)

First a beer and a cigarette to unwind.
Then I will make something easy.
Peel spuds and cut up some cabbage, or whatever I have in the fridge or freezer and steam them over the spuds.
If I had been on the ball I would have take something out of the freezer the previous evening and that might be some Chicken drums Wiener Schnitzel Chops or whatever and I would just throw them in the oven.

I don't eat very well after a long night at work. It's usually quesadillas, rice, box mixes, ramen, something like that. I've seen too much food all day, that's the last thing on my mind so I just have a snack.
But on my days off I cook like crazy so I have leftovers for a couple days.

A nice salad with lettuce, tomatoes, cukes, carrots....cheddar cheese, pepperoncini, olives, bacon bits, crutons, and a combination of Catalina dressing and Marie's blue cheese dressing. Also, either turkey, chicken, or tuna (yes, from the can.......white meat only). To drink....VitaWater (fruit punch)
