I'm trying to make a cake for a coworkers birthday. When asked what her favorite cake was she said it was Vanilla cake with choclate frosting and pudding in between the cake layers. Have you ever heard of this? I'm not sure how to go about pudding filling?

Here is a GREAT recipe for Boston Cream Pie...From Rose Kennedy...

Boston Cream Pie

Bake a cake in two seven-inch or eight-inch layer cake tins using a cake mix, a one-egg cake or golden layer cake recipe; or use the following recipe for Boston Favorite Cake.

Ingredients:
1-3/4 cups flour (if using all purpose flour, decrease the amount by 2 tablespoons)
1/2 teaspoon salt
3/4 cup sugar
2 teaspoons baking powder
1/3 cup butter
1/2 teaspoon vanilla
2 egg yolks
1/2 cup milk
2 egg whites

Preheat the oven to 375 degrees for the cake layers. Sift together the flour, salt and baking powder in a bowl. In a separate bowl, cream the butter. Add the vanilla and gradually beat in the sugar. Beat this till fluffy. Next, beat
in 2 egg yolks and stir in 1/2 a cup of the flour mixture. Stir in 1/4 cup of milk and then add 1/2 cup of the flour mixture and another 1/4 cup of milk. Mix. Add the rest of the flour mixture and beat just enough to blend well. In a separate bowl, beat the 2 egg whites until they stand up in soft peaks. Fold the egg whites into the batter. Spoon the batter into 2 7 or 8 inch cake pans (round) Bake the layers 20-30 minutes at
375 degrees.

Recipe for the Cream Filling:

Ingredients:
1/2 cup sugar
3 tablespoons flour or 1 tablespoon cornstarch
few grains salt
1 cup milk
1 egg or 2 egg yolks (slightly beaten)

In a small heavy pan, put the sugar, flour and salt. Stir in milk. Mix a cook over low heat until the mixture thickens (about 5 minutes) Add the 1 egg or 2 egg yolks and mix. Cook and stir for 3 minutes more. Chill and Flavor.

Recipe for the Chocolate Frosting:

Ingredients:
2 ounces unsweetened chocolate
1 tablespoon butter
1/2 cup milk
2 cups confectioners sugar
1/2 teaspoon vanilla

Place the chocolate, butter and milk in the top of a double boiler. Cook on medium low until the chocolate melts. Stir Well. Take off the heat and let stand until lukewarm. Stir in the sugar and vanilla. Beat until thick enough to spread.

Please note: if you are using an electric mixer or beater, do not separate the eggs. Add to the creamed butter and sugar one at a time, beating well.

Put together the cream pie:
Put the layers together with whipped cream, cream filling or rich cream filling. Sprinkle the cop with confectioner's sugar or spread with chocolate frosting.

ABBY'S BOSTON CREAM PIE

CAKE:
1-1/3 c. flour
3/4 c. sugar
2 tsp. baking powder
1/2 tsp. Salt
1/4 c. shortening
2/3 c. milk
1 egg
1 tsp. Vanilla

FILLING:
1 (3 1/2 oz.) pkg. instant vanilla pudding
1 3/4 c. milk

GLAZE:
2 (2 oz.) squares semi sweet or unsweetened chocolate
1/4 c. butter or margarine
3 tbsp. milk
2 c. confectioners' sugar
1/8 tsp. Salt
1/2 tsp. Vanilla

Preheat oven to 350 degrees. CAKE: Grease and flour 9" layer pan. Combine flour, sugar, baking powder and salt in large mixing bowl. Add shortening and milk. Blend well at low speed for 1 1/2 minutes. Add egg and vanilla extract; continue beating 1 1/2 minutes at low speed. Pour batter into pan. Bake at 350 degrees for 30 to 35 minutes. Cool on wire rack. Split in half.

FILLING: Follow directions on package for pudding decreasing milk to 1 3/4 cups. Let thicken slightly. Spread on bottom layer.

GLAZE: Melt chocolate. Blend in margarine and milk. Add sugar, salt and vanilla, blend until smooth. If necessary thin with a few drops of milk. Frost top with glaze, allowing to drip down sides.

Refrigerate until serving time. 6 servings.

Yes, just make a plain vanilla cake (or pound cake), slice it lengthwise in the middle (you can do this with a piece of dental floss, place it right in the middle of the cake and go through the cake from one side to the other). Then prepare your pudding (Jello works) and put it on top of the bottom half. Carefully place the top half and frost it. All of this has to be done when the cake is already cooled.

They're right - it's a Boston Cream Pie. Here's an easy recipe:

Boston Cream Pie

1 round yellow cake layer (9 inch)
1 cup cold milk
1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding & Pie Filling
1-1/2 cups thawed COOL WHIP Whipped Topping
1 square BAKER'S Unsweetened Baking Chocolate
1 Tbsp. butter
3/4 cup powdered sugar
2 Tbsp. cold milk

CUT cake horizontally into two even layers with serrated knife; set aside.
POUR 1 cup milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 min. or until well blended. Gently stir in whipped topping. Let stand 5 min. to thicken. Place bottom cake layer on serving plate. Spread with pudding mixture; top with the remaining cake layer.
MICROWAVE chocolate and butter in medium microwaveable bowl on HIGH 1 min. Stir until chocolate is completely melted. Add sugar and 2 Tbsp. milk; stir until well blended. Spread over top of cake. Refrigerate at least 1 hour or until ready to serve. Store in refrigerator.

Easy Boston Cream Cake

INGREDIENTS
1 (18.25 ounce) package yellow cake mix
1 (5 ounce) package instant vanilla pudding mix
1 (16 ounce) package prepared chocolate frosting

DIRECTIONS
Make cake according to package directions, using two 8 inch round pans. allow cake to cool completely.
Mix pudding according to package directions, spread between layers.
Place chocolate icing, uncovered, in microwave for 30 seconds until thin, pour over top of cake until it runs down sides. Refrigerate for 1 hour.
