ITALIAN OMELET SANDWICH
4 tablespoons LAND O LAKES® Butter, softened
1 teaspoon dried basil leaves
4 eggs, beaten
1/4 cup sliced green onions
1/4 teaspoon pepper
1 (9-inch) round (12-ounce) focaccia bread, sliced in half horizontally
2 ounces thinly sliced salami
1/4 cup sliced roasted red peppers
4 (1-ounce) slices LAND O LAKES® Deli Provolone Cheese
Heat oven to 350°F. Combine 3 tablespoons butter and basil in small bowl; mix well. Set aside.
Melt remaining butter in 10-inch nonstick skillet until sizzling; add eggs. Sprinkle with green onions and pepper. Cook over medium heat, lifting slightly with spatula to allow uncooked portion to flow underneath, until omelet is set (3 to 4 minutes).
Spread cut-sides of focaccia bread halves with butter mixture. Layer bottom half with salami, omelet, red peppers and cheese slices. Cover with top half of focaccia. Wrap tightly in aluminum foil; place onto baking sheet. Bake for 10 to 15 minutes or until heated through. To serve, cut into 6 wedges.
Recipe Tip
Eggs are protein-rich, low in sodium and contain essential vitamins and minerals including B12 and Vitamins A and D. In addition, they are one of the least expensive forms of high-quality protein.
Recipe Tip
Always keep eggs refrigerated and store them in the carton to ensure their freshness.

If you have a waffle iron, wheat bread with ham and cheese fixed in the waffle iron makes a great sandwich. I also like turkey and sharp cheddar on wheat with sliced dill pickles. Pepporoni and american cheese grilled makes a good sandwich as well. If you like pimento cheese then toast the bread and then spread the pimento cheese. I have a few other good ideas, but they consist of beef so I will leave those off.

I'm not a big sandwhich person, but if I grill up my sandwhiches I can eat them for quite awhile..I'm on a budget myself LoL. I always butter my bread like I would for Grilled Cheese, throw it on my skillet, and throw on whatever deli meat I am using (I prefer Ham or Turkey) at the other end of my skillet. My hubbys new favorite, is shredded chicken. We had chicken for dinner the night before so for his lunch, I shredded the chicken and threw it on the skillet with my toasted bread and added some cheese to the bread..I dashed a few spices on the chicken as it was heating up on my skillet as well. Also, if you are using a dry meat (Chicken, Pot Roast anything that has already been cooked once really), once your pan is good and hot, keep throwing little amounts of water on the meat to keep it nice and moist.

Ham and Cheese or Grilled Ham and Cheese sandwiches are always a crowd pleaser. You can use mayo, mustard, or ever butter on the bread.

For hot sandwiches a grilled ham and cheese with Dijon mustard or sliced tomato is cheap and easy. It can be classed up with different types of cheese or ham like brie and black forest ham or prosciutto and asiago. But regular boiled ham and karft singles are fine by me!

Simple, easy... but strange !
Snoopy-Sandwich:
On whole wheat, spread peanut butter on one slice and mayo on the other... add kosher-dill pickle slices and bacon slices. Assemble and enjoy !!
Dad used to make them for us as little kids... I still make one each Saturday lunch from my weekly dose of Saturday breakfast bacon !!
TRY it... you'll like it !! Enjoy the other recipes as well.
