There are simple carbs and complex carbs. The more complex the better for you. However, all carbs contribute to weight gain, and must be carefully regulated and dealt with.

Most cookies, cakes, rolls, breads, pasta of all sorts, etc are made from the worst flours for our bodies. That is because they are the cheapest for manufactures to make, and profit motive is not health related. Rice and corn are grains, not vegetables as commonly used.

Shop in health food stores mainly.

You can use a variety of other healthier flours amiable in great health food stores. I even use a gluten free one nyslef. It still works.

Whole grains are ALWAYS better for us than non whole grain products. However, one must read labels like a hawk, becsuse if it doesn't say 100 percent whole grains, they are making their products with cheap flour mixed in, and usually tons of it. Whole wheat bread is mostly not whole whet flour too unless it says 100 percent while grain whole what. Their packaging is cleaver and made to deceive consumers..

Nuts, seeds, beans are complex carbos, and although great for us, can lead to weight gain as well, and possible gas if eaten in abundance.

The real trick is to cut severely back on all carbos, and limit what you intake to complex ones where possible.

There is a lot of confusion about carbs. Carbs are necessary for the body but as you mention there are "good" carbs and "bad"carbs.

Bad carbs are those that come from white or light colored grains and more often called simple carbs. For example standard white bread, hamburger buns, pancakes. Also white rice and white potatoes are also bad carbs. Simple carbs hardly need any digestion so they quickly turn to sugar int eh body, raise your insulin levels, spike your blood sugar levels and turn to fat stores.

Good carbs, or complex carbs are products made from whole grains or are fruits that are high in fiber. It's the fiber in the products that is not readily broken down to sugar that slows digesting and keeps your blood sugar levels from spiking . Thats why although fruit can be high in sugar it's the fiber that keep it from being absorbed so quickly.

When purchasing any grain products look for the words 100% whole grain or 100% whole wheat on the package. If it doesn't say 100%, then it's a mixture of whole and white grains and your back to simple or bad carbs again.

Although fruit and vegetables are considered complex carbs, white potatoes, corn, oranges and tangerines are relativley simple in it's carb structure and should be limited when you are dieting. Also fruit jiuce is a simple carb because you don't have the fiber from the fruit itself. You orange may have some pulp in it, it is not as much as if you had eaten the fruit instead so stay away from fruit juices.

To make it easy to decide if a food has good or bad carbs look at the color. Light colors = bad carbs in grains and dark colors or very bright colors in fruits and veggies = good carbs. If you want to add vitamins to the mix the more rich the color of your veggies, the more vitamins it has.

I hope that this clears it up a bit.

good carbs=more fiber, less 'process'
bad crabs=white anything and processed
if buying bread go by weight, if the loaf is heavy considering how many grams you are buying, it is a good sign it is healthy. Because it is likely to contian, nuts, fiber, etc.
Try sweet potatoes rather that white, try natural oatmeal rather than instant, 'enritched'=garbage.
Whole grain wheat... go for it, but if you find weight creeping on, lay off the carbs, good or bad.
Fruits with alot of sugar: watermelon, oranges, and bananas are tops.
Fruit with minimal: Berries(strawberries, blackberries, raspberries)expensive yes, deliscious, indeed!
Other safe fruits:peaches, apples, grapefruits
Also, if on a low-carb keep an eye out for portions, I have a knack for cheese and nuts, which if not kept under control, can be your demise.
p.s. want cheap berries? check the frozen aisle. also, sugar free pudding is deliscious
