Use the best ingredients... very fresh eggs that laid by free range chicken which only be fed with natural feeds. These chickens haven't been "pushed" to lay more eggs and just go with the flow through their natural cycle, so the eggs would taste a lot better. Real fresh eggs smell good, the aroma, you can tell when you've just broke it.
Use good quality of cooking oil to fry your omelet, good quality sea salt (natual).... etc. any ingredients you use should have their own natual flavour, you can smell it before you mix them together!
Then... you would have the most delicious omelette, in fact a very safe and healthy one too.
Most organic free range chicken eggs can be consumed raw, so don't over cooked your omelette, that's the cooking skill part.

Use quality ingredients. Whisk the eggs very well. Must add some little milk ( it will make the omlete fluffy; some cooks call it Bombay Omlete) - a teaspoon will do for two eggs. Use adequate amount of cooking oil. Try adding Oregano or roasted cummins seeds - these really will give good flavour.

Just be creative,
I like to use some ham,fresh sliced mushrooms,fresh sliced tomatoes,season with desired seasoning and sprinkle with some kind of green grass that I don't remember the name of in American.

Sorry.
There is another thing that is real tasty:
I pinch some holes in a few potatoes,put them in the microwave,peel of the peel,
chop the potatoes in dices (not too small,they will "disapear"),
put some margarine in a skillet,
let the margarine melt and let the skillet get a little hot,
watch it so it don't get too hot and you don't want the margarine to catch fire!!
add the potatoes,let them brown on all the sides,
(don't let them get black though)
you may wanna chop up some oinion as well,and fry it together,season it with whatver you desire.
It tastes so good for breakfast with eggs bisquits and etc.
I PREFER USING MARGARINE INSTEAD OF OIL IN THE SKILLET,IT GIVES THE POTATOES A BETTER TASTE!
You can even use small pieces of these potatoes in an omelet,but fry them in margarine first,they taste better when they are a little bit browned on each side.
