Yes you can, but it wouldn't really tenderize the meat, and depending on how you cook the pork chops, most of the flavoring would burn off during cooking. Oyster sauce has a lot of sugar, which could make the pork chops stick to the pan. I would reccommend marinating in something that has the ability to tenderize the meat a little more (like Italian dressing-the vinegar in it acts as a tenderizer) and then pouring a little oyster sauce on the finished product.

Broccoli With Oyster Sauce Serves 4 INGREDIENTS: * 1 pound broccoli flowerets * Sauce: * 1/4 cup chicken broth * 1 tablespoon oyster sauce * 1 tablespoon dark soy sauce * 1 teaspoon granulated sugar * 1/4 teaspoon sesame oil * Pinch of salt * 1 teaspoon cornstarch dissolved in 4 teaspoons water * 2 tablespoons white sesame seeds PREPARATION: Bring a large pot of salted water to a boil. Add the broccoli and blanch for 2 to 3 minutes, until it is tender but still crisp. Remove from the saucepan, plunge briefly into ice cold water, and drain. In a small saucepan, bring the chicken broth, oyster sauce, dark soy sauce, granulated sugar, sesame oil to a boil. Pour the sauce over the blanched broccoli. Serve hot, garnished with the sesame seeds.

I like to use oyster sauce as a marinade for beef and chicken wings.

The flavour is unique and matches with almost any kind meat like beef, chicken, or as dipping sauce for vegetables, stir fried scallops, prawns, or be used to braise dried seafood (scallops, abalone, sea cucumber, etc.)

Marinade for Beef or Pork Chop (1lb or 600g)

3 tablespoons oyster sauce
1.5 tablespoon cooking wine
1 tablespoon cornstarch
1 teaspoon ginger powder
3 cloves of garlic, crushed (or replace by 2 teaspoons of garlic powder)
1 tablespoon of water
1 tablespoon of light soy sauce
1/2 teaspoon of sugar

(Do not marinate beef or pork too long because it would make the meat turn hard, 15 to 20 minutes is quite enough, as for chicken wings, you can marinate them overnight and for BBQ or grilled, tastes wonderful!)

You may stir fry the marinated beef with tofu or Japanese leek or Chinese bok choy or cabbages. Easy & quick!

Lee Kum Kee Brand is the best because they invented oyster sauce 100 years ago, the other brands are fake and may contains MSG. Good oyster sauce takes a lot of time to prepare and I would recommend you to try golden label of Lee Kum Kee Oyster Sauce.

P.S. I usually marinate pork chop with soy sauce, a bit of ketchup, a bit of garlic powder and ginger powder, sugar and salt and cooking wine, the taste is simple and I like my pork chop taste simple, oyster sauce is kind of too rich for pork chop, but you may try my marinade recipe and see how it goes. reduce the portion of oyster sauce if you feel it is too much, adjust the taste and have fun.

oh yes, you sure can, I would suggest that you thin it out with a little wine or sherry and add a little sugar, you can then cook the excess marinade down and you have a great sauce for the dish
