Just about anything you would add to an omelet. I brown hash browns, peppers, onions, olives and just stir the eggs around with the other ingredients and add cheese on top. Our local restaurant calls it 'veggie browns'

Thai people are usually adding fish-sauce. Mix them really good then fry it with really high heat. Be quick, you don't want it to get burn.
In addintion to that, you can add a bit of ground pork.
If you want to know how it taste like, go to thai restaurant and order "Kai jeaw moo sub".

I have tried pork floss but must wait till the egg is almost cooked. You can steam egg instead of fried.

You can add cheese in a scrambled egg, or bacon bits, tomatoes, ham, just about anything in a scrambled egg

You can add many ingredients.
Smoked beef, sausage, corned beef, bell pepper, onion, mushroom, cheese, etc.
Whatever you feel like eating.
